About the Bread
Our bread is made using organic grains and is naturally fermented. Our Ontario grown whole grains are freshly stoneground, preserving the the germ and aromatics of the grain and giving the bread an earthy, nutty flavour.
Our whole grains are grown and milled by Peter Leahy from Merrylynd Farms, in Duoro Ontario. Working directly with Leahy, our grains are milled to our specifications on his Ostillroller stone mill. Peter's certified organic farm is dedicated to preserving local food systems and the local grain movement, planting low yielding crops such as Red Fife, Emmer and Einkorn, promoting flavour and diversity in the soil.
